Sesame Shrimp

In a bowl, beat the egg whites with a fork until frothy. Put sesame seeds in another bowl. Pour oil into a deep fryer or heavy saucepan to a depth of at least 2 inches. Place the pan over medium heat until oil reaches 350 degrees Fahrenheit. When the oil is ready, dip the shrimp first in egg white and then roll them in sesame seeds. Being careful not to crowd the pan, drop 5 to 6 shrimp into the hot oil and cook, turning them with a slotted spoon, until golden brown, approximately 2 to 3 minutes. Using the slotted spoon transfer the shrimp to paper towels; to drain. Best when served hot or at room temperature.
