Tropical Chicken and Rice

• 8 chicken breasts
• 1 stick butter
• 2 1/2 cups uncooked rice
• 1/8 cup cooked wild rice (optional)

A

• 1 Tbsp. chicken bouillon
• 2 cups pineapple juice
• 2 cups pina colada mix
• 1 can pineapple bits

Saute chicken until brown, set aside. Saute rice in butter. Add ingredients (A). Return chicken to pan. Cover and cook for 20 minutes or until rice is tender. Stir in wild rice.

Serves 8.
